PUMPKIN BANANA PANCAKES (PALEO RECIPE)
If you thought banana pancakes were good... wait until you try these!
Makes 5ish medium pancakes
Ingredients:
2 Bananas
1/2 cup Cooked Pumpkin
4 Eggs
2 Tbsp Coconut flour
2 Tbsp Almond flour
Cinnamon
Ginger
Cloves or Allspice
Instructions:
Mash bananas and pumpkin until wet and smooth (even a relatively green banana will mash down to a near-batter). Add eggs. Beat together with a fork or whisk. Add flour, and whisk in evenly. Every batter will be different due to varying moisture content and ripeness of the ingredients, so add or subtract flour as needed.
Using a coconut oil based non-stick spray, cook them on a griddle or saute pan until browned on each side and cooked all the way through.
Tip: The best time to flip them is when bubbling on the surface stops, the bubbles open up, and the surface begins to harden. Be sure to respray the pan between pancakes. Also, a good rule of thumb with all banana or fruit pancakes: If your first pancake is falling apart, add another egg to the remaining batter. Egg is the binding agent in batters, and will hold the pancake together.
