It appears that something is influencing our gut health for the worse, because 50 year old stored blood samples are showing five times less celiac disease than we find in today's population. I personally believe we should all be eliminating processed wheat (white flour) from our diet, and reducing even the amount of whole wheat we eat, unless it has been fermented (as in sourdough).
